CHICKPEA SALAD SANDWICH

This is not your average sandwich. It's extremely savory, flavorful, satiating and simple. Everything you'd ever want! 

It's creamy, healthy, and full of wonderful textures and flavors.

The smashed chickpeas are mixed with tahini, mustard, dill, maple syrup (for a bit of sweetness) and spices that are piled on top of my favorite toasted coconut bread with lettuce, cherry tomatoes and avocado.

You can make several days worth to have on hand for effortless weekday lunches, salads and wraps, so it's the perfect thing to add to your meal prep list.

Chickpeas are  super creamy and contain more iron and vitamin C than any legume and they're even better for you when sprouted. 

Sprouting neutralizes phytic acid (interferes with the absorption of zinc, magnesium, calcium and iron) making more minerals available and activating the enzymes needed for healthy digestion.
