KALE FALAFEL


This falafel is my absolute favorite. It's flavorful, completely satiating AND it's vegan, gluten free and healthy.

This recipe calls for kale, but you can also use collard greens or chard. I clearly love kale, but I've tried them all and they're all great options.

All you need is a food processor, a pan and 25-30 minutes to prep and cook these delicious bites. Easy peasy.

They're crispy on the outside, tender in the inside and loaded with spices and flavors that are addictive. Try them with hummus, in a pita sandwich or on their own.

I personally love doubling the recipe, so I have a big batch to eat throughout the week. They're a delicious snack or a great option for an easy lunch or dinner when you're short on time.

***This recipe calls for chickpeas, one of my favorite beans. They're super creamy and contain more iron and vitamin C than any legume and they're even healthier for you when sprouted. 

Sprouting neutralizes phytic acid (interferes with the absorption of zinc, magnesium, calcium and iron) making more minerals available and activating the enzymes needed for healthy digestion.
