The one thing I really miss is CHEESE. I gave it up a long time ago — though I cheat on occasion, it usually isn't worth it. My body just doesn't like it, and neither does my skin!
Enter cashew cheese made with nutritional yeast and soaked sprouted cashews. I can eat my weight in this — it's really that good.
It's simple, incredibly rich and creamy, flavorful, satiating and savory in all the right ways. It's also dairy-free, nourishing and unprocessed. Can't think of anything better to satisfy my cravings.

Makes: 1 cup
1 cup sprouted cashews (soaked overnight)
3-4 tablespoons lemon, juiced
1/4 cup filtered water
2 tablespoons nutritional yeast
1 teaspoon fresh garlic (or garlic powder)
Pinch of salt, to taste
1/4 teaspoon chili powder (optional)
1/2 teaspoon onion powder (optional)
Soak cashews for 4 tp 6 hours (or overnight) in 2-3 cups filtered water. Drain and discard water.
Add all ingredients to high-powered blender and blend until smooth.
Taste and adjust the flavor, as needed, and add more filtered water (or fresh lemon juice) until you've reached the desired consistency.
Store leftovers in an airtight jar or container. It will keep in the refrigerator for 4-5 days.
