Cucumber kimchi or oi kimchi is so delicious during the warmer months. It's lightly fermented (or not at all), so if you've ever been curious about kimchi in general, this would be a great one to start with - it's not as pungent and as the others and has an amazing crisp texture.

You can eat cucumber kimchi in any veggie/grain bowl, as a side dish or in sandwiches. It has a refreshing taste that's just the right amount of spicy. 

It takes around 40-45 minutes to prepare, super simple and easy
