It's holiday time! This is the time of year that I don't feel "bad" indulging. In fact, I find a lot of joy in celebrating the season.
These mini cakes are tender, beautifully spiced and perfectly sweet (but not too sweet). I'm so obsessed, I made them multiple times throughout the cold-weather months—for myself, as gifts and for parties.
This recipe was made in partnership with TheFeedFeed and Vitamix using their Explorian machine (my new favorite high-speed blender) and their winter spice mix.
These mini loaves are perfect to share, especially if they're made with love. They're also ridiculously cute—can't go wrong.

1 cup raw almonds, soaked overnight
2-1/2 cups sifted flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
Vitamix winter spice seasoning (see link above for full recipe)
Orange zest from one orange
1/4 teaspoon sea salt
2/3 cups melted extra virgin coconut oil, plus more for oiling the pan
Juice from orange (use the one you used for zest)
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
2-3 tablespoons unsweetened apricot jam
Preheat oven to 350 degrees F.
Lightly oil a mini loaf pan and line with parchment paper. Set aside.
Add almonds to high-speed blender and 2-3 cups of filtered water. Blend until smooth - add more filtered water, if needed, to get a creamy consistency.
Combine sifted flour, sugar, baking powder, baking soda, spice mix, sea salt and orange zest in a large bowl and stir to combine.
In another bowl, whisk melted coconut oil, orange juice, vanilla extract, almond extract and almond cream. Pour into flour mixture and stir to combine.
Pour batter into mini loaf pan (about 1/2 to 3/4 to top) and bake for 35-40 minutes or until edges are golden brown.
Remove from oven and allow mini loaves to cool completely in the pan. Carefully invert onto a cutting board then peel off parchment.
To make the glaze, place jam in a small pot over medium heat and stir until melted (about 1 minute). Remove from heat and use a pastry brush to lightly brush glaze over the each mini loaf.
