I love making these Mexican-inspired sweet potato cups! They're super easy, healthy, filling (but light), vegan, gluten free and entirely satisfying.  

This would be a great Meatless Monday option, as a snack or meal. You'll get all the healthy fats, fiber and protein you need.

It takes around 30-35 minutes to prep and cook and includes some serious healthy eats ~ roasted sweet potatoes, black beans, dark leafy lettuce, cilantro, limes and guacamole.

The best part is this is something that keeps well in the fridge, so you can eat eat this salad throughout the week.
